Case Study Errichel House & Thyme Restaurant At its core Errichel is a working native breeds farm, with Shetland Sheep and Cattle, pigs and poultry. This forms the basis of the unique field-to-fork offering of our 2 AA Rosette Thyme at Errichel Restaurant.

My husband Paul is chef patron at Thyme, and has won many awards for his dishes including Chef of the Year in 2018. The stylish roundhouse restaurant is at the heart of Errichel House and is surrounded by our four and five star holiday cottages, four beautiful ensuite guest bedrooms, and the house is styled in contemporary luxury, complimenting the peaceful and scenically magnificent setting.

We offer our guests the chance to experience life on a working farm, visit all the animals, explore the local area, its sights and activities, and to dine in style at Thyme restaurant on Paul's celebrated seasonal menus built around our own produce, and using supplementary local ingredients such as Perthshire grown berries.

Errichel is undertaking some significant projects to enhance the environment, our energy consumption, and waste output. The house is heated by a Biomass boiler and powered by solar panels. We have overhauled the plastic and non-recyclable elements of the kitchen setup and processes and have installed coffee machines that use biodegradeable coffee pods and tea bags.

We follow conservation grazing methods on the hill farm to encourage diversity and promote natural reeneration of woodlands and meadows. Of historic interest are some prehistoric hut circle sites, and we are working with Perth & Kinross Heritage Trust on the archaeology, with a view to establishing a field school on site, and eventually this will also develop into a designated tourist attraction.

As a husband and wife team with professional chef and hospitality skills, our multi-faceted enterprise at Errichel gives guests the best possible experience of field-to-fork dining and fresh produce, combined with the most comfortable accommodation,and surrounded by peaceful, relaxed luxury and contemporary style finished to the highest standards.
